SISTEMUL LACTOPEROXIDAZIC O METODĂ ALTERNATIVĂ DE
CONSERVAREA LAPTELUI

REZUMAT
Prin studiile şi cercetările efectuate în cadrul prezentei lucrări s-a încercat evidenţierea
metodei conservării laptelui proaspăt prin Sistemul Lactoperoxidazic, ca fiind o posibilă metodă
alternativă de conservare, în scopul îmbunătățirii igenei laptelui de-a lungul trasabilității lui. În
urma studiilor asupra: efectelor microbiologice și acțiunii lui asupra microorganismelor,
sănătății si nutriției umane s-a concluzionat că această metodă de conservare are un efect
bacteriostatic și mai rar bactericid, nepunând în pericol sănătatea umană și nemodificând
componentele nutriționale ale laptelui.
Sistemul Lactoperoxidazic constă în adăugarea de tioceanat de sodiu și peroxid de
hidrogen pentru a reactiva enzima lactoperoxidazică existentă deja in compoziția laptelui
proaspăt, care menține calitatea laptelui fără refrigerarea până la procesare sau pasteurizare.

ABSTRACT
Trough the conducted studies during the present paper was tried to highlight the
Lactoperoxidase System as an effective and feasible method of raw milk preservation, as part of
a program to improve milk hygiene and safety, along the food chain. As a result of studies on:
microbiological effects and its action on microorganisms, health and human nutrition was
concluded that this method of preservation has a bacteriostatic effect and bactericidal less,
without putting at risk human health and nutritional components of milk.
The Lactoperoxidase System consists of the addition of sodium thiocyanate and
hydrogen peroxide to reactivate the existing Lactoperoxidase enzyme in milk that maintains the
initial quality of the milk without refrigeration until the milk can be processed or pasteurized .
